Mini raj kachori with ghee-roasted makhana in a curd base, chutneys and spice mix.

  • Roast makhana lightly in ghee until crisp; cool.
  • Whisk yogurt with a little sugar and black salt until smooth.
  • Crack mini kachori shell gently and add roasted makhana and optional potato/chickpeas.
  • Top with sweet yogurt, drizzle tamarind and mint chutneys.
  • Finish with sev, pomegranate, cumin, chaat masala, red chili powder; serve immediately.
